As for the first, keep in mind that you have 6 columns (+3 fx) available per track.
So that would need 2 tracks to get 8+8.
And 2nd, the envelopes can be set to 0 attack and 0 release and if you set it also to half sustain, then you got your regular gate on/off.
And for recording, you can record in different ways into the 6 columns.
With Midi either up to 6 voices into the columns. Or up to 5 voices plus an envelope in the last column. (First note on -> attack sustain and last note off -> envelope release) or also real polyphonic so each note sets also it’s own envelope. That can then be up to 3 CV + 3 Envelope polyphonic.

I'm exploring the polyphonic capability of cv16 expander. After i 've seen your superbooth 2020 video.
I've a little sequence running on midi channel 1.
On the track setup i choose 3 record voices.
Out 1 to 3 are patch to VCO's, all is ok the sequence is running alternativly to the 3 VCOs.
Then i try to obtain some envelope, so i choose 3+envO for record voices.
then only cv1 is playing one note among three. cv2 an 3 didn't do anything and the differents CV of my seaquence seems to be on the others cv out but as fix values.
I cant't figure how and where i can obtain the envelop.
Then if i go back to 3 record voices, only the CV1 is correctly functionning. CV2 and CV3 don't do anything.
I have to reset the nerseq to obtain "normal" behavior.
